Egg and New Potato Salad


4 new potatoes

2 tbsp olive oil

Juice of ½ lemon

Handful chopped parsley

3 eggs

Bag of wild rocket

Cucumber, diced, to serve


  1. Boil the eggs for 10 minutes, then leave to cool
  2. Boil the new potatoes in salted water for 15 – 20 minutes
  3. Once the eggs are cool, carefully peel off the shell and cut into quarters
  4. Toss the hot boiled new potatoes with the olive oil, lemon juice and parsley and leave to cool.
  5. Then toss with the quartered hard-boiled eggs, wild rocket leaves and some diced cucumber to serve
