Rainbow Hummus Bowl
Fresh greens (such as spinach, rocket and romaine)
Mix of chopped vegetables (such as steamed green beans; beetroot, raw pepper, carrots, avocado and olives)
Handful of chickpeas
- Smear the hummus around the inside of a deep single-serve salad bowl.
- Add the greens, beans, sprouts and veggies and toss.
- Drizzle with olive oil and lemon juice.
- Season with salt and paprika.
- Toss to coat.
